How to smoke meat and fish using a gas BBQ

There’s an easy way to introduce smoky flavours into your gas BBQ. The team at BBQ Buddy share their hints and tips on how to do this.

What you need to start smoking food at home

All you need is the BBQ Buddy smoker box and some woodchips. You can choose your preferred flavour of woodchips to add an extra level of flavour to your meat.

Preparing your woodchips

The BBQ Buddy woodchip soaker makes preparing woodchips for smoking easy. It’s recommended that woodchips are soaked in water for at least 20 minutes before use but for best results, soak them for 2-3 hours. You can also add fruit juices, herbs and spices to create a distinct flavour. Once your woodchips have finished smoking, pour the chips and liquid into the smoker box.

Using the smoker box

Pre-heat the grill and place the smoker box directly on top of the burner and close the hood of the BBQ. Once the BBQ begins to smoke, turn the burner to medium heat and place the meat alongside the smoker box on the adjacent hotplate. The meat will cook slowly using indirect heat and absorb the smoky flavours emanating from the smoker box. Remember to keep the BBQ hood closed.
